Chanterelles!


Over the weekend, I was fortunate to acquire a bunch of chanterelles from my gleaning community. It's only this year I've started to cook them, and I realize upon taste what I'd been missing out on.

Chanterelles not only have a pretty name and good looks, but they taste good. They're a great meat substitute and have a savory flavor when sauteed in some butter and garlic. 

For brunch, I made myself a two-egg omelette using the season's last chanterelles and ate them with a cup of Greek yogurt. Delicious.
